A stunning mélange of fruit, herb, savory, and hints of earth on the nose captures the depth and style of this extended aged Sangiovese. Dark cherry, black raspberry, grilled bouquet garni, wet terra cotta, and subtle notes of leather layer this wine with depth and aromatic complexity. On the palate, the wine seamlessly balances acid, chalky tannin, and concentration to provide a wine with great approachability and certainly the structure for extended aging.
Stolpman Vineyard, Ballard Canyon
Hand harvested and destemmed completely, cold soaked for 5 days with daily pump over circulating and homogenizing the juice before inoculation. At onset of fermentation the grapes are lightly foot stomped and then punched down 2 times per day at peak, 1 time per day toward the end of fermentation. Pressed at dryness and transferred to 325 gallon concrete amphora and 60 gallon barrels. After 12 months, the wine is racked, and then blended, before additional aging for another 24 months.
